The craft
What is a frozen fruit?
A simple, fresh dessert: the fruit itself, hollowed out by hand and filled with a sorbet made from its own flesh. Here is how we make it, on Rue Hassania in Gueliz.

The fruit, filled with its own sorbet
A frozen fruit is the fruit itself: we hollow it out by hand, make a sorbet with its flesh, fill it back in, then close the fruit and freeze it. The sorbet is served in the fruit, with no cup or tub.
The frozen lemon and the frozen orange are the best known. At Frümee, the menu has 24 fruits, all the way to the frozen coconut and the frozen pineapple.
